Secrets Which Can Make Diabetic's Life Easier 

 

 1. Useful information and practical advice regarding diet    

Of course, we cannot say there is a magic formula to remove diabetes - which is a chronic disease. But still, we can help the pancreas repair its malfunctions to a large enough extent so that the quality of life becomes comparable to that of a non-diabetic. A program for patients with type 2 diabetes (without insulin) led by Professor Robert Taylor of Newcastle University in the UK, demonstrated that their diabetes was cured only by a low-calorie diet (600-800 calories/day) maintained on a period of 8 weeks. This professor understood that if excess fat was removed from the body (usually diabetes is also associated with fat metabolism disorders, sometimes with obesity), then pancreas function would be greatly improved, sometimes to the point of healing for a period next to few months. This effect is comparable to that obtained by stomach bariatric surgery, which allows weight loss and cures obesity.  
The patients participating in this program lost an average of 15 kg, consuming only foods of mainly vegetable origin, rich in vitamins, minerals, amino acids, antioxidants. We saw in the previous chapter how many plants with a beneficial effect in diabetes exist, - proven by studies - and among them, many vegetables. None of these patients complained of feeling hungry during the diet. A secret of this diet is that patients also consumed in larger quantities rice, potatoes, bread – foods usually recommended in diabetes only in a certain amount (''on scale''). But, this program highlighted the fact that consuming them cold, and not warm, causes the transformation of starch contained within into resistant starch. It has a different molecular structure, which allows a reduced absorption in the bowel, and consequently it remains longer in the bowel, and generates the feeling of satiety. In addition, this type of starch decreases insulin resistance, thus improving pancreas function. 
 
For each type of starchy food, there are specific chilling methods.  
The wholemeal bread is sliced ​​and put into the freezer, where it is kept for at least 12 hours. When we want to eat it, two slices are taken out and fried (only two slices are consumed per meal). Through moderate roasting, the bread acquires a taste and qualities specific to consumption. 
 Potatoes are boiled covered in their skins, then cooled, and kept in the refrigerator at 4°C. They must be  consumed cold, without reheating. 
 Boil the rice, then put it into the fridge and eat it cold.  
This program by Professor Taylor includes, in addition to diet, moderate exercise. The total remission (healing) of diabetes, obtained only through diet, for a period of up to six months, brought important benefits to respective patients' bodies, by improving all metabolisms, and regenerating pancreatic beta cells. In 2020, several programs for patients with type 2 diabetes in England and Scotland, modeled on Professor Taylor's program, were funded.
 In practice, we can only recommend the preferential consumption of vegetables and fruits known for playing a role in lowering blood sugar, and of course, the cold consumption of foods containing starch is also recommended - after putting them into the refrigerator. But, completely stopping your treatments is a decision that, under no circumstances, should be taken by you alone. That clinical trial was conducted under physician's supervision, and took only a limited period of time. 
 
 Vegetable juices, which can be consumed between meals, or even replacing a meal, if we decide to follow a diet with only them for a few days, are very effective, both for lowering blood sugar and achieving the feeling of satiety. 
 These are:
 – carrot juice with green beans,
 – carrot juice, salad, green beans, Brussels sprouts, consumed in any proportion, up to 2 l per day.  
- spinach, celery and carrot juice - 500 ml/day.  
Otherwise, to fight the "sweet  tooth" more easily, we can "trick" the body, consuming small fruit snacks between meals, even those allowed only on a scale, but never should we take sweets containing sugar. We can also eat a pastry without cream or other fillings, and without sugar, like: biscuits, a pretzel, a bar, etc. Although these products contain starch, it is easier for pancreas to process it than glucose, plus being found in small quantities. For better digestion, we can do a little exercise between meals. 
 As we stated in the chapter about nutrition, a diabetic patient should have three main meals and two snacks between meals. To help you create these menus, we will provide you with some examples of daily menus.  
At breakfast 
  – to choose between:  
• Cheese with peppers and tomatoes or cheese with cucumbers or other vegetables. 
 Preferably without bread, but of course, if it seems too drastic, add a slice of wholemeal bread, preferably toasted;  
• A cup of milk with whole grain flakes, or a bagel;  
• A cup of yogurt with barley flakes and oats;  
• An egg with raw vegetables – the egg to be boiled and NOT fried. 
 • A table of fruits in sufficient quantity, or 500 ml of vegetable juice;  
 • A grill (meat on a steam grill or grill and NOT a wood grill) with fresh vegetables;
 • Olives with cheese and fresh vegetables; 
  • Marinated fish;
 • A salad of raw vegetables with seeds, with cheese or fish, seafood, possibly soured with lemon.
 • You can drink unsweetened coffee, unsweetened tea or water, probiotic drinks: kefir, kombucha, socata, pickle juice, drinking yogurt, whipped milk, etc..  
A snack: 
  - Either a portion of seeds, or a yogurt or a salad, or fruit, or a minimal pastry as mentioned above, or a vegetable juice, or nuts, or popcorn (unsweetened)  
Lunch
 • Either a large portion of vegetable soup or ratatouille (no noodles, potatoes, rice, semolina); 
 • Or a barbecue with salad of raw vegetables; 
 • Mushrooms stuffed with cheese, baked on grill or in the oven;
 • Roasted peppers with garlic and a slice of grilled meat;
 • Grilled eggplant – not eggplant salad, which contains oil; 
 • Itch of peas, beans, lentils, chickpeas, along with pickled cucumbers - only 1-2 cucumbers, because excess salt is not recommended, olives, etc.; 
  • Humus (with seeds, but without oil); 
  • Mushroom food (not tchiulama, which contains flour);
 • Mushroom or vegetable cream soup, onion soup, etc. 
  • Broccoli, cauliflower, cabbage food - no oil! A clarification regarding the oil: it is only used in salads, not in cooked dishes - preferably olive or rapeseed oil (but other vegetable oils can also be used - e.g. corn, etc.).  
Snack:
 - Raw fruit or vegetables or a salad, a yogurt, a spoonful of raw seeds, a vegetable juice 
 Dinner:  
- Warm and light dishes are preferred, such as soups or hot dishes. You can also choose a dish from the list of those indicated for lunch. Clarification: on each meal, after choosing among the recommended foods, in order to achieve the feeling of satiety, you can use the plate method to  the quantitative composition of the menu, which was mentioned in the chapter on nutrition.
